Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup cooked and mashed pumpkin (canned pumpkin puree can also be used)
2 tablespoons vegetable oil
1/2 cup warm water
Vegetable oil for frying
Honey or cinnamon sugar for serving (optional)
Instructions:
In a large mixing bowl, whisk together the flour, baking powder, and salt.
Add the mashed pumpkin and vegetable oil to the dry ingredients and mix well.
Gradually add the warm water to the mixture, stirring until a smooth dough forms. Knead the dough for a few minutes until it becomes smooth and elastic.
Cover the dough and let it rest for about 15 minutes.
Roll out the dough on a floured surface to a thickness of about 1/4 inch. Use a round cutter or a knife to cut the dough into circles or squares.
Heat oil in a deep fryer or a heavy-bottomed pot to 375°F (190°C).
Fry the sopaipillas, a few at a time, until golden brown on both sides, about 1-2 minutes per side.
Remove the sopaipillas from the oil with a slotted spoon and drain them on paper towels.
Serve the sopaipillas hot with honey or sprinkled with cinnamon sugar, if desired.
