Recipe for making classic enchiladas that are sure to please your taste buds:
Ingredients:
12 corn tortillas
2 cups of shredded cooked chicken or beef
1 cup of shredded cheese
1/4 cup of chopped onion
2 cloves of garlic, minced
2 tablespoons of vegetable oil
2 cups of enchilada sauce
Salt and pepper to taste
Toppings of your choice: chopped cilantro, diced onion, sliced avocado, sour cream, etc.
Instructions:
Preheat your oven to 350°F (175°C).
Heat the oil in a skillet over medium heat. Add the chopped onion and minced garlic, and cook until the onion is translucent.
Add the shredded chicken or beef to the skillet, and season with salt and pepper. Cook for a few minutes until the meat is heated through.
Warm the tortillas on a dry skillet or griddle over medium heat for about 30 seconds on each side.
Pour a small amount of enchilada sauce into the bottom of a 9x13-inch baking dish.
Dip each tortilla into the enchilada sauce to assemble the enchiladas, then fill with a spoonful of the meat mixture and a sprinkle of shredded cheese. Roll up the tortilla tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
Pour the remaining enchilada sauce over the top of the enchiladas, and sprinkle with any remaining shredded cheese.
Bake the enchiladas for 20-25 minutes, until the cheese is melted and bubbly.
Serve hot, topped with your desired toppings.
Note: You can use any type of meat or fill for your enchiladas, such as shredded pork, beans, or vegetables. You can also make your own enchilada sauce from scratch, or use a store-bought variety.
