Recipe for making dumplings:
Ingredients:
1 lb. ground pork
1 cup Napa cabbage, finely chopped
1/2 cup scallions, finely chopped
1/4 cup cilantro, finely chopped
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon Shaoxing wine (or dry sherry)
1 tablespoon ginger, peeled and minced
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
40-50 dumpling wrappers
Water, for sealing dumplings
Vegetable oil, for cooking
Instructions:
In a large mixing bowl, combine the ground pork, Napa cabbage, scallions, cilantro, soy sauce, sesame oil, Shaoxing wine, ginger, garlic, salt, and black pepper. Mix well with a spatula or your hands.
Take a dumpling wrapper and place 1 tablespoon of filling in the center. Use your finger to wet the edge of the wrapper with water.
Fold the wrapper in half and press the edges together to seal. Then pleat the edges of the wrapper together to make a crescent shape.
Repeat until all the filling is used up.
Heat a non-stick pan over medium heat and add 1 tablespoon of vegetable oil. When the oil is hot, add the dumplings in a single layer, flat side down.
Pour in enough water to cover the bottom of the pan by about 1/4 inch. Cover the pan and let the dumplings cook for 6-8 minutes until the water is evaporated and the bottoms are golden brown and crispy.
Remove the lid and continue cooking for another 1-2 minutes until the tops are lightly browned and crispy.
Serve hot with soy sauce and chili oil for dipping.
