Ceviche is a dish that is popular in many Latin American countries, including Mexico, Peru, and Ecuador. It is typically made from raw seafood, such as shrimp or fish, that is marinated in citrus juice and spices.
Ingredients:
1 lb raw shrimp or firm white fish, cut into small pieces
1 cup fresh lime juice (about 6-8 limes)
1/2 cup diced red onion
1/2 cup chopped fresh cilantro
1-2 jalapeño peppers, seeded and minced
1 avocado, diced
Salt and pepper to taste
Instructions:
Place the raw shrimp or fish in a large glass or ceramic bowl.
Pour the lime juice over the seafood, making sure it is completely covered. Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour, or until the seafood is "cooked" by the acid in the lime juice. You will know it's ready when the seafood turns opaque.
Drain off most of the lime juice, leaving just enough to coat the seafood.
Add the diced red onion, chopped cilantro, and minced jalapeño pepper to the bowl. Mix well to combine.
Season the ceviche with salt and pepper to taste.
Add the diced avocado to the bowl and gently stir it in, being careful not to mash the avocado.
Serve the ceviche cold, garnished with additional cilantro or sliced jalapeño peppers, if desired.
Note: You can also add other ingredients to your ceviche, such as diced tomatoes, cucumbers, or mango. Adjust the amount of jalapeño pepper to your desired level of spiciness.
